Whenever we have a big family get-together a Low Country Boil is almost always on the menu. It's a spicy mix of shrimp, sausage, potatoes, corn, onions, carrots and whole cloves of garlic, all boiled together in huge pots of crab boil.
To serve a crowd you'll need:
fresh, unpeeled shrimp
spicy sausage (we used Conecuh)
new red potatoes
sweet Vidalia onions
whole cloves of garlic
carrots
corn on the cob (fresh, homegrown Silver King)
(or any other vegetables you want - green beans are good, brussel sprouts...)
crab boil (we used Zatarain's)
(I didn't list amounts as they will vary depending on how many people you're cooking for. For example, for this one we used 10 pounds of shrimp and had loads leftover. There's no harm in leftovers!)
It's pretty easy to put together. Round up a few volunteers for the prep-work - shucking corn, chopping onions, separating garlic cloves and chopping potatoes and sausage into manageable-sized pieces.
In the meantime, get a big 'ol, pot full of water (or several pots) boiling with plenty of crab boil.
Once your water is boiling away, toss in your potatoes, onions, garlic, and sausage. After a few minutes, throw in the carrots and any other veggies you've got. If you're using frozen corn, put it in now.
You can dip things out as they get cooked, or just leave them so that they gets lots of that good spicy flavor.
Add the shrimp and corn last since they only need a few minutes to cook.
Serve everything up in big bowls or on a big serving platter and dig in! Make sure you've got lots of cocktail sauce for dipping, and nice crusty bread to spread the garlic on. Be sure to have lots of paper towels on the table as this is a hands-on, messy meal!
This is definitely a feast on it's own, but add a salad if you think it needs something green.
This isn't so much as a recipe as it is a suggestion. There're really no set rules when it comes to a Low Country Boil. Just add whatever looks good and you can't go wrong!
